A 20th-century halachic issue. Classical sources discuss only the underlying principles; the canonical contemporary responsa (Igrot Moshe, Tzitz Eliezer, Yabia Omer, Minchat Shlomo) are not yet ingested in full.
The modern industry of kosher supervision: OU, OK, Star-K, Kof-K, Triangle-K, Israeli Chief Rabbinate, Badatz Edah HaChareidis, Chug Chatam Sofer, and dozens of smaller agencies. Each has its own standards on chalav stam, pas akum, bishul akum, yashan/chadash. Foundational modern infrastructure for industrially-produced kosher food. R. Moshe Feinstein and R. Belsky (longtime OU posek) were defining authorities.
